I’m back to making videos, and this time I demonstrate how to cook chicken sauce piquante. Piquante refers to something prickly, and in this case, the “prickly” or sharpness comes from a heavy roux, tomatoes, and a healthy dose of cayenne pepper. Splashes of hot sauce add a bit more flavor, too. I also include suggested wine pairings from Arterra Wines in Loudoun County, Virginia.
